I'm a big fan of the Kershaw Blur. I had the Tanto version, 14c28n blade, and it was very durable. Sadly, it walked away at work a couple years ago and I've replaced it with cheaper knives that don't hurt so much when they get lost or stolen. I also have a Camillus folder with a 3.5" AUS8 blade that is very functional and durable but I don't believe that model is still available.
For everyday use, I just go with a little Cabela's folder. The 420 steel blade kind of sucks, but it sharpens easily and it's only about $10...
