One of our favorite recipes is taking an elk or deer loin and soak it in milk for 2 or 3 days. Change the milk at least once. This takes all the wild taste out for those who are not fans of venison. Even my mother in law likes it. Then put cream cheese and banana peppers in the middle. Wrap it completely with a lattice of bacon. Put in oven or on smoker. It's amazing. The milk tenderizes any deer or elk steaks. Easy peezy
Basic meatloaf ingredients: eggs, milk, breadcrumbs, your favorite finely chopped vegetables, your favorite seasonings. What really made it was the bacon wrap. Line a bread pan with bacon and press in the meatloaf mixture, flip over on a foil lined cookie sheet and bake away.
For the last 20 mins, it was basted with a blend of ketchup, BBQ sauce, a little Devils Spit sauce, honey, brown sugar, white vineagar, and your favorite spices. It was moist and delicious, and also made great sandwiches the next day.
